Welcome to Shake, Sip, Serve
If you want something that actually feels like Easter but is not overly heavy, this is the one to make.
A lot of Easter cocktails lean towards chocolate and cream, which is great, but sometimes you just want something fresh and easy to drink.
This Spring Berry Easter Egg Spritz gives you both. It is light, fizzy, and still has that Easter feel by serving it inside a chocolate egg.
It looks impressive, but it is honestly very simple to put together.

Planning Your Easter Drinks Menu
If you are putting together drinks for the long weekend, make sure you check out my full guide on 10 Easter Cocktails to Try This Year in Australia.
It will help you balance your menu with a mix of lighter drinks like this and a few more indulgent options as well.
Why This Cocktail Works
This drink is all about balance.
You have fresh berries bringing flavour and colour, a bit of sweetness to round it out, and bubbles to keep it light.
Serving it in a chocolate egg adds that Easter element without making the drink itself too rich.
It is also very beginner friendly. There is no shaking, no complicated steps, just building the drink in the glass or egg and adjusting to taste.
Spring Berry Easter Egg Spritz Recipe
Light, refreshing, and perfect for Easter entertaining with a fun twist.
Ingredients
60 ml prosecco
30 ml soda water
30 ml mixed berries
10 ml sugar syrup
Fresh mint
Ice
1 large hollow chocolate Easter egg
Method
Carefully split your chocolate Easter egg in half. Place one half into a small bowl or nest so it stays stable.
Add the mixed berries into the chocolate egg and gently press them to release some flavour.
Add a small amount of ice. Do not overfill, as the chocolate will be sensitive to temperature.
Pour in the prosecco, then top with soda water.
Give it a very gentle stir to combine.
Garnish with fresh mint and a few extra berries on top.
Serve immediately.
Pro Tips
Use a thicker chocolate egg so it holds its shape longer once the drink is added.
Keep your ingredients cold before building the drink to slow down melting.
Do not overload with ice. A small amount is enough.
If you want a stronger flavour, you can add a splash of berry liqueur.
Beginner Tip
This is a great one if you are new to cocktails because there is no pressure.
You are not shaking or measuring perfectly. You are building the drink and adjusting it as you go.
Taste it before serving. If it needs more sweetness, add a little syrup. If it feels too strong, add a splash more soda.
Before You Start Mixing
Before we start mixing, make sure you have your cocktail kit ready to go. A proper shaker, jigger and strainer will make the process smoother and help you create a better balanced drink. If you are still building your home bar, we recommend the Barillio cocktail kit here. Now let’s shake up something great.
When to Serve This Cocktail
This is perfect for daytime Easter entertaining.
It works well as a welcome drink, something light during a long lunch, or even just something fun to bring out for guests.
It is also one of those drinks people will take photos of, which never hurts.
Make It Even Better
Once you have made this, you can easily change it up.
Try using sparkling rosé instead of prosecco.
Add a squeeze of lemon for a bit more freshness.
Or swap the berries depending on what you have.
It is a very flexible drink once you get the base right.
Final Thoughts
This is one of those cocktails that hits the sweet spot.
It is simple, looks great, and feels a bit different without being difficult.
If you are trying to build confidence with cocktails at home, this is exactly the kind of drink you should be making.
