Riberry Mojito
A Fresh Native Australian Reinvention of the Classic Mojito
The Mojito is one of the world’s most refreshing cocktails. Mint, lime, rum and sugar combine to create something bright and endlessly drinkable.
The Riberry Mojito takes that classic structure and introduces a native Australian berry that deepens flavour, enhances colour and sharpens the finish.
Riberry adds subtle spice, tart cranberry notes and a beautiful blush tone to the drink. It is still unmistakably a Mojito, just with more character.
This is summer in an Australian glass.
What Is Riberry
Riberry is native to eastern Australia and has long been used in both culinary and beverage applications. Its flavour profile includes:
Tart cranberry notes
Subtle clove and spice
Soft berry sweetness
Light herbal undertones
In cocktails, riberry brings brightness without excessive sugar and works beautifully alongside citrus and rum.
What Is a Riberry Mojito
The Riberry Mojito keeps the traditional Mojito structure:
White rum
Fresh lime juice
Sugar or syrup
Fresh mint
Soda water
The addition of riberry syrup or lightly muddled riberry enhances acidity and adds colour without overwhelming the mint.
Served over ice in a tall glass, it remains crisp, fresh and sessionable.
Ingredients
Serves one
45 ml quality white rum
20 ml fresh lime juice
15 ml riberry syrup
6 to 8 fresh mint leaves
60 to 90 ml soda water
Ice
Mint sprig and fresh riberries or lime wheel for garnish
How to Make Riberry Syrup
Combine:
1 cup water
1 cup white sugar
2 tablespoons riberry puree or dried riberries
Simmer gently for 5 to 10 minutes.
Strain and cool.
The syrup should remain lightly tart rather than jam like.
Store refrigerated for up to one week.
Australian Standard Drink and Responsible Service
With 45 ml white rum at approximately 37 to 40 percent alcohol by volume, this cocktail contains around 1.3 to 1.4 standard drinks before dilution.
In Australia, one standard drink equals 10 grams of alcohol.
Measure accurately using a jigger and serve responsibly in line with Liquor and Gaming NSW or your relevant state authority. Mojito style cocktails are refreshing and easy to sip, so pacing remains important.
Step by Step Method
- Add mint leaves to a highball glass and gently press once to release aroma. Do not shred.
- Add riberry syrup and fresh lime juice.
- Fill the glass with ice.
- Add white rum.
- Top with soda water.
- Stir gently to combine.
- Garnish with a fresh mint sprig and riberries or lime wheel.
Serve immediately.
Why Riberry Works in a Mojito
The Mojito already balances sweet, sour and herbal elements. Riberry enhances that balance by:
Adding sharper acidity
Introducing subtle spice
Deepening colour
Maintaining freshness
It transforms a familiar drink into something distinctly Australian without complicating the build.
Flavour Profile
The aroma opens with fresh mint and citrus.
On the palate, bright lime meets light berry tartness. Riberry adds depth and faint spice while rum provides smooth structure.
The finish is crisp, refreshing and slightly drier than a traditional Mojito.
It feels modern and ingredient driven.
When to Serve a Riberry Mojito
Summer barbecues
Australia Day celebrations
Beach themed gatherings
Garden parties
Brunch entertaining
Warm afternoon events
It pairs perfectly with sunshine and relaxed entertaining.
Food Pairing Suggestions
Grilled prawns

Citrus desserts
The acidity cuts through fresh, savoury dishes beautifully.
Variations
Sparkling Riberry Mojito
Replace soda water with dry sparkling wine for a celebratory twist.
Riberry and Ginger Mojito
Add a small splash of ginger beer for added spice and warmth.
Frozen Riberry Mojito
Blend ingredients with ice for a slushy style summer version.
Common Mistakes to Avoid
Over muddling mint
Using overly sweet riberry syrup
Skipping fresh lime juice
Using crushed ice that melts too quickly
Under stirring
Freshness and balance define this cocktail.
How to Batch for Entertaining
For eight servings combine:
360 ml white rum
160 ml lime juice
120 ml riberry syrup
Chill thoroughly.
Pour 75 ml per glass over fresh ice, top with soda and add fresh mint to each serve for maximum aroma.
Do not batch mint in advance.
Before You Start Mixing
If you are planning to entertain regularly or want that “home bar” feel, this is worth the upgrade early.
A proper shaker, jigger and strainer will make the process smoother and help you create
a better balanced drink. If you are still building your home bar, we recommend the Barillio cocktail kit here. Now let’s shake up something great..
Final Thoughts
The Riberry Mojito is fresh, vibrant and distinctly Australian.
It respects the original Mojito while enhancing it with native character and depth.
Handle the mint gently. Keep the syrup balanced. Let the riberry shine.
That is how you elevate a classic into something uniquely your own.
