The Story Behind the Gold Rush

The Gold Rush cocktail may be considered a modern classic, but it has already earned its place alongside long-standing favourites. Created in the early 2000s at New York City’s Milk & Honey bar, it was developed by bartender T.J. Siegel as a twist on the Whiskey Sour.

By swapping out simple syrup for honey syrup, Siegel gave the drink an extra layer of richness — floral sweetness with more depth than sugar alone. That small change turned a familiar recipe into something that felt fresh, balanced, and timeless.


Australian-Friendly Gold Rush Recipe

Ingredients:

  • 60 ml bourbon whiskey

  • 30 ml fresh lemon juice

  • 22.5 ml honey syrup (equal parts honey and hot water, mixed until smooth)

  • Lemon twist for garnish

Method:

  1. Make honey syrup → Stir equal parts honey and hot water until dissolved, then let cool.

  2. Chill your glass → Rocks or coupe glass works best.

  3. Shake it up → Add bourbon, lemon juice, and honey syrup to a cocktail shaker with ice.

  4. Shake vigorously → 15–20 seconds for proper chill and dilution.

  5. Strain & serve → Into your chilled glass, neat or over ice.

  6. Garnish → Express a lemon twist over the drink and drop it in.

👉 Bartender Tip: Honey can crystallise — always ensure your syrup is smooth before mixing.
