Watermelon Mojito Recipe (Australian Measurements)

Ingredients:

  • 60 mL (2 oz) white rum (Bacardi, Havana Club, or Diplomatico Blanco)

  • 120 g fresh watermelon cubes (about 1 cup)

  • 8–10 fresh mint leaves

  • 30 mL fresh lime juice

  • 15 mL simple syrup (½ oz, adjust to taste)

  • Soda water, to top

  • Ice cubes

  • Watermelon slice + mint sprig for garnish

Method:

  1. Muddle: In a shaker, gently muddle watermelon cubes until juicy.

  2. Add mint & lime: Add mint leaves and lime juice, muddle lightly to release oils without tearing.

  3. Combine: Add rum and syrup, then fill shaker with ice. Shake vigorously 15–20 seconds.

  4. Serve: Strain into a tall glass over ice. Top with soda water.

  5. Garnish: Add a mint sprig and watermelon slice for colour.

💡 Bartender Tip: Always use fresh lime juice — bottled won’t deliver the brightness this drink needs.
